The major difference in substituting zucchini for pasta noodles is the calorie count. You would have to eat 11 cups of zoodles to equal 1 cup of noodles in calories. Zoodles also have a significantly higher amount of potassium than plain noodles. Noodles have 10 times the amount of carbohydrates than zoodles. Zucchini are also high in Vitamin A and C, which makes it a nutrient-rich food versus noodles that offer almost no nutrients. If you are looking for a substitution that offers nutrients, zoodles are the way to go.

What are zoodles?

Zoodles have become the latest trend in healthy eating. They are thin slices of zucchini that look like noodles. The easiest way to make zoodles is by using a specialty kitchen gadget that does it for you. You can also use a vegetable peeler or a paring knife.  Even though people call them zoodles, you are not limited to just zucchini. You can use yellow squash, butternut squash, potatoes, sweet potatoes, etc. You can cook the zoodles anyway you might prepare your favorite pasta dish. Zoodles are a great substitute for noodles if you are looking for a lighter option.
