Creamy BLT Zucchini Pasta

Ingredients:

  • 4 slices of bacon
  • 1 Tablespoon extra virgin olive oil
  • 1 garlic clove, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 1- 14.5 ounce can of crushed tomatoes
  • 1 teaspoon tomato paste
  • 1/2 teaspoon dried oregano flakes
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 large zucchini
  • 2-3 cups arugula (I did 3 cups spinach)
  • 1/4 cup grated parmesan cheese

Directions:

  1. Place a large skillet over medium-high heat and coat with cooking spray. Once heated, add in the bacon slices and cook for 2-3 minutes. Flip over and cook another 3-5 minutes or until crispy. Set aside on a paper-lined plate.
  2. Wipe down the skillet and place it back over medium-high heat. Add in the olive oil and once heated, add in the garlic and red pepper flakes. Cook until fragrant, about 30 seconds. Then add in the tomatoes and tomato paste. Season with salt, pepper, and oregano and let cook for 10 minutes or until sauce is fully reduced.
  3. Once reduced, add in the arugula (I did spinach) and zucchini noodles. Cook, tasting frequently, for 2-3 minutes or until noodles wilt and cook through. Remove from heat and stir in the grated parmesan cheese. Toss noodle mixture until cheese melts and then crumble in the bacon and give another toss to combine.
  4. Serve immediately.

Cheesy Zucchini Quinoa Bake

Ingredients: 

  • 4 cups zucchini noodles (2 large zucchini)
  • 8 ounces shredded cheddar cheese
  • 1 cup cooked quinoa
  • 2 Tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 2 Tablespoons grated parmesan cheese
  • 1 teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon black pepper  (optional)

Directions:

  1. Preheat oven to 400 F.
  2. Toss zucchini, cheddar cheese, quinoa, oil, salt, pepper, and crushed red pepper flakes together in a bowl. Then spread into an 8 x 8 baking dish.
  3. Sprinkle parmesan cheese over the top and bake for 30 minutes until the top is golden.

Shrimp Scampi Zoodles

Ingredients: 

  • 1 Tablespoon olive oil
  • 1 small onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon Sriracha Sauce, or hot sauce of your choice
  • 1 pound cooked shrimp
  • 1 cup cherry tomatoes, cut in half
  • 2 large zucchini
  • 1 cup chicken broth
  • juice from half of a lemon
  • 1/2 cup parmesan cheese

 

Directions:

  1. Using a spiralizer or a grater, make the noodle strands. Place in a bowl and set aside.
  2. In a large skillet heat the olive oil and cook the onion and garlic until soft. Add hot sauce, chicken broth, and juice from half of a lemon. Stir then throw in the shrimp and cherry tomatoes.
  3. Cook for a couple of minutes, not too long because shrimp is already cooked. Season with salt and pepper.
  4. Remove from heat. Add zucchini noodles and toss. Top with green onions and parmesan cheese. Serve while warm.
